Otaru, a port town once enlivened by the bustling traffic of Kitamaebune trading ships.
With “fermentation” as our theme, we combine seasonal Hokkaido ingredients with a wide range of fermentation techniques,
crafting dishes rooted in Japanese cuisine.

Upgrade the standard creative kaiseki course:
we serve a whole Hokkaido horsehair crab presented in its shell,
and king crab grilled to a fragrant finish.
